Named Coronation Chicken Salad due to the fact that it was served at Queen Elizabeth's Coronation lunch back in 1953. This salad is very similar in composition to our regular Normandy Chicken Salad, in that the balance of chicken to crunch/ fresh ingredients remain the same. However, we have added curry powder ( mild), dried apricots, grapes, mango chutney and golden raisins instead of dried cranberries. Still the same amount of celery for crunch, and toasted pecans.
